- Special design of whisk
- Aerating under vacuum
Aerating a mass by batch
The mass is aerated by a jacketed batch aerator. The special design of the whisk ensures a low speed. The mass and the whipping agent are aerated in a vacuum so that they will not expand. After aerating, the aerated mass will be discharged by air pressure.
